Cut from the feet of the cattle, this is a tough band of fibrous connective tissue and it contains large amounts of collagen. However, after long hour of boiling or stewing, the breakdown of the collagen gives it a mouthfeel mimicking that of high-fat cuts of beef. Tendon is the main ingredient in the Malay's Sup Urat (Tendon Soup) or the Chinese's beef stew.
