Rosemary is native to the Mediterranean region, and is used to flavor stuffing and roast lamb, chicken, turkey, and other traditional Mediterranean cuisine. It also goes well with grains, mushrooms, onions, peas, potatoes, and spinach. They have a bitter, astringent taste and a characteristic aroma which complements many cooked foods.
