The femur bone is from the lower legs of the cattle, and it is best known locally as the chief ingredient of a must-try Malay dish, "Sup Gearbox". In addition, femur bone is also used to make pho in Vietnamese cooking, Italian osso buco, French pot-au-feu, German Markklößchen, Pilipino bulalo and South Asian nalli nihari. It is nutrient-dense and contains collagen for improved joint function, plus easily digestible forms of zinc, phosphorous, calcium, iron and Vitamin A.
