Allspice, also known as Jamaica pepper or Jamaica pimenta, is the dried unripe berry of Pimenta dioica, a tree native to Carribean and Central America. It is called allspice as it has the combined flavours of cinnamon, nutmeg, and clove.
Allspice is one of the most important ingredients of Caribbean cuisine, such as being the main ingredient in Jamaican jerk seasoning. It is also indispensable in Mexican and Middle Eastern cuisine, and some Arab dishes use allspice as the only spice.
In northern European and North American cooking, it is an ingredient in commercial sausage preparations and curry powders.
