Pappardelle are large, very broad, flat pasta noodles, similar to wide fettuccine, originating from the region of Tuscany. The name stems from the Italian verb pappare–to gobble up. This pasta is ideal to enhance rustic sauces, traditionally a thick rabbit ragu, but equally well with slow-cooked meat sauce of any kind.
